The May Day Cocktail

Sometimes, our blender just sits there looking sad.  We know, we know... We should be using it every morning to create wildly healthy blends of spinach and kale juice, but that just doesn't happen more than once a year (generally on January 1st).  But then it hit us like a stroke of genius -- why not put rum in the blender?  Certainly, that would make the whole blending process gain a new, previously unattainable level of attractiveness.  Toss in some fruit (for your health, naturally), and you now have a delicious, nutrient-filled beverage -- appropriately named the "May Day" -- and no one can accuse you of ignoring your blender.  For slightly more detailed instructions, see below:





Ingredients (serves 2):



2 ripe peaches, pitted and roughly chopped


4 strawberries, cubed


4 oz apple juice (preferably cloudy)


Flesh and seeds of 2 passion fruit (optional)


1 Tbsp superfine sugar


2 tsp grated fresh ginger


1 part rum

-crushed ice





Directions:

 Blend all the ingredients together with crushed ice.

  Pour the mix equally into two highball glasses.

 If you want to get fancy, garnish with an apple slice.
