Summer Cocktails

Spring is here!  It’s time to celebrate, and there’s no better way to celebrate then, er, a cocktail.  (Noticing a pattern here?)  In our opinion, the ideal summer cocktail is light and a touch fruity, but not saccharine.  Our watermelon margaritas and grape quenchers are pretty much perfect.  These drinks are so light and tasty that waiting until 5pm seems like an unnecessary formality – don’t you think?

Light Watermelon Margarita

Ingredients (serves 3):

2 cups cubed seeded watermelon

1/4 cup tequila

1 tablespoon sugar

1 ½ tablespoons fresh lime juice

½ tablespoon Triple Sec (orange-flavored liqueur)

Lime wedges or watermelon balls (optional)

Combine the first five ingredients in a blender and process until smooth.  Fill three glasses with ½ cup crushed ice each, and add ½ cup of the drink to each glass.  Note: you can add the ice directly to the blender if you want more of a frozen margarita feel.  Garnish with lime wedges or watermelons balls if you want, and enjoy without guilt

– each serving has only 100 calories.

Grape Quencher

Ingredients (serves 1):

1 oz vodka

1 oz triple sec
1 oz lime juice

Grape juice (to taste)

Combine the vodka, triple sec and lime juice in a highball glass over ice. Top with grape juice – just a splash if you like your drink

strong, a hearty pour if you like it sweet.
