Baked Acorn Squash with Brown Sugar & Maple Syrup
Ingredients:
• 2 acorn squashes, cut into quarters
• 4 tablespoons brown sugar
• 4 tablespoons butter, softened
• 3 tablespoons maple syrup
• Few pinches of salt
• Few pinches of black pepper (optional)
Directions:
1. Preheat oven to 400 degrees F.
2. Scoop the seeds and stringy pulp out of the squash cavities and discard.
3. In a small mixing bowl, combine the brown sugar, butter, syrup, and salt and pepper.
4. Rub the squash cavities and cut sides of the squash with the butter mixture and place them on a baking sheet, cut side up.
5. Bake for about 1 hour until the squash is tender when pierced with a fork. Serve one to two quarters per person.
Total time: 1 hour 15 minutes.
Serves 4 to 6.
